These Caramel Apple Cookies are the perfect fall dessert. They’re perfectly soft and chewy, have just the right amount of apple flavor, and are topped with a sweet caramel glaze.

Fall is the season for cooking…and baking…and spending the majority of your time in the kitchen making all the best fall foods.

These Caramel Apple Cookies are just one of my favorite fall desserts. They’re melt-in-your-mouth delicious, almost cake-like in texture, and have the perfect apple flavor finished with a sweet caramel glaze.

  • Baking Soda – Keeps the texture of the cookies lighter and fluffier.
  • Spices – Salt, cinnamon, and cloves
  • Apples – Peeled and shredded.
  • Caramel Glaze – Our simple caramel glaze is made up of butter, brown sugar, water, icing sugar, and milk.
  • Chopped Walnuts – I like to top the cookies off with a sprinkle of walnut pieces to add some texture and to complement the spicy apple flavor.

How to Make Caramel Apple Cookies

This delicious fall cookie recipe is ready in a total of 30 minutes!

  • Step One: In a bowl, beat the butter and brown sugar until combined, then mix in egg and ¼ cup apple juice.
  • Step Two: In a separate bowl, mix together flour, baking soda, and spices. Stir the flour mix into the butter mix, then stir in ¼ cup apples juice and apples.
  • Step Three: Portion the dough out onto a baking sheet, then bake until a toothpick comes out clean.
  • Step Four: In a saucepan, add butter and brown sugar. Heat until melted, then remove from the heat and add in icing sugar and mix. Whisk until smooth, then drizzle over the cooled cookies.

Recipe Tips and Tricks

  • Use whatever apples you have on hand. I had red delicious, so that’s what I used in this recipe, but anything will work.
  • Peel the apples. Cooked apple peel can become chewy when baked. I recommend peeling them before shredding.
  • Check for doneness. To verify that the cookies are done, insert a toothpick into the center. If it comes out clean, they’re good to go.
  • Cool completely. Let the cookies cool off on a cooling rack before you add the icing. If they’re still warm, the icing will melt and become too runny.
  • Swap the nuts. Chopped pecans would work great too. Alternatively, just leave the nuts off if preferred.

Storage Instructions

Finished caramel apple cookies will last in an airtight container at room temperature for 3-4 days or in the fridge for up to 1 week.

Can I Freeze Caramel Apple Cookies?

You can, but I recommend doing so without the icing. To freeze the cookies, let them cool completely, then store them in an airtight container in the freezer for up to 3 months.

If you’re stacking them in the container, layer pieces of parchment paper in between the cookies to prevent sticking.

Ingredients

  • ½ cup unsalted butter softened
  • 1 ¼ cup brown sugar
  • 1 large egg
  • ½ cup apple juice divided
  • 2 ¼ cup all-purpose flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 tsp cinnamon
  • ¼ tsp ground cloves
  • 1 cup apples peeled and shredded

Caramel Glaze

  • 3 tbsp unsalted butter
  • cup brown sugar
  • 2 tbsp water
  • 1 ½ cup powdered sugar
  • 2 tbsp milk
  • cup walnut pieces

Instructions

  • Preheat oven to 350°F. Spray a baking sheet with cooking spray.

  • Add butter and brown sugar to a mixing bowl and beat on low until combined. Beat in egg and ¼ cup apple juice.

  • Add flour, baking soda, salt, cinnamon and cloves to a large bowl and stir to combine. Stir flour mixture into butter mixture. Mix in ¼ cup apple juice and apples.

  • Add a rounded teaspoonful of batter to the baking sheet, evenly spaced apart. Bake for 15 minutes or until a toothpick comes out clean. Let cool on a cooling rack.

Caramel Glaze

  • Add butter and brown sugar to a saucepan over medium high heat. Stir until the butter melts and the sugar dissolves. Remove from heat.

  • Stir in powdered sugar and milk until smooth. Drizzle over the cooled cookies. Top with walnuts.
