Hey there! This Low Carb Fajita Marinade Recipe actually has zero net carbs and it only takes five minutes to make.
This marinade can be used to jazz up beef, shrimp, chicken or veggie fajitas. It has all of the flavor you could want and no fuss.
It’s no secret that I love spicy food and this marinade has made fajita night so simple!
This is going to be short and sweet….
🥘Ingredients:
- 2 Jalapenos. – One de-seeded and de-veined. One whole with seeds for heat.
If you are sensitive to spicy food, de-seed both of the peppers before blending the marinade.
If you like even more heat, choose Serrano or Habanero peppers for a kick.
- 3 cloves Garlic
You can add more if you like a strong garlic flavor.
I have added six to this recipe with awesome results for steak. It was a little too much for chicken.
Garlic is an amazing low calorie food that has a ton of health benefits. Squeeze it in wherever you can. Especially during cold and flu season.
- ½ oz cilantro * To taste – about ⅓ of small bunch
- 3 tbsp Olive Oil
- 2 tbsp Lime Juice
I usually use 1/2 of a lime and it’s perfect.
- Salt & Pepper *to taste- TASTE IT!
Stick your finger in and taste your marinade before you pour it onto your meat.
👨🏿🍳How to make the Fajita Marinade:
- Put everything in a blender and blitz until smooth.
I use a blender that has a small cup that’s perfect for making marinades. Plus, it’s dishwasher safe and has stood up to my abuse for five years. Check it out here.
- Pour into a ziploc bag with the meat & veggies you intend to use for fajitas.
The time you need to marinate depends on the meat. If you already have a feel for it you can skip this section….
Since this is an acid based marinade it will tenderize whatever you mix it with.
Shrimp: At least 30 minutes but no longer than 1 hour.
Chicken (Not Sliced): At least 1 hour but not more than 10 hours. If you sliced the meat, stick with an hour or less to avoid mushy meat.
Steak / London Broil (not sliced) : At least 1 hour and up to 24 hours. If you sliced the meat you can still marinate overnight but I wouldn’t go “mush” longer.

Veggies (Onion, Bell Peppers): At least 30 minutes and up to 10 hours. If you are adding mushrooms, add them in the last 30 minutes of marinating.

Can I make this ahead of time?
No. Make it fresh each time you want to make fajitas. It’s too easy.
What should I serve with fajitas?
You can serve the fajitas with low carb tortillas or with salad greens to make a Fajita Bowl.
