Sometimes you just need a really yummy go-to dinner that doesn’t require a lot of ingredients and isn’t gonna require a whole lot of time.

When it’s been a long day, say a Tuesday maybe (those tend to be long, I don’t know why) and I’m dog tired and my stomach is growling louder than a pit bull and I’m starting to get (let’s face it) grumpy.

The last thing I want to do is slave over a hot stove just to get a good meal on the table.

I want yummy food and I want it NOW. Oh you can relate?? Good. I’ve got just the cure for a day like that.

Let’s take a quick minute to talk about the sausage.

The wait for the sausage to cook, at this point, would have been pure torture. Worse than if you’d pinned back my eyelids and forced me to watch Caillou on repeat for an entire day.

Fortunately for me & you, I can solve all my problems by cooking the sausage ahead of time on Saturday or Sunday, draining it well, and then storing it in the refrigerator until ready to use later in the week in this dinner dish. Tupperware or a ziplocking bag both work, as long as the sausage has cooled.

You can even cook more than a single pound of sausage to have on hand for other easy weeknight meals like our two timin’ pasta, or for this simple .

It’s one of the main reasons it’s a main stay on my busy Mom’s last minute menu plan.

A handful of ingredients, most of which I keep on hand, and a hot heart meal is on the table in roughly thirty minutes. How often can you say that?

Also (partly because the word pizza’s in the title) because it tastes like one of my kids’ favorite food groups, it’s a meal they never complain about being served.

Why Is It Called A Bubble Up Casserole?

Whatever the flavor of the recipe you’re making, it ‘bubble up’ is in the title- it’s referring to the canned biscuits it’s calling for.

Canned biscuits are pulled apart, cut into quarters, and tossed in this pizza casserole recipe. The same would be the case for any other bubble up casserole recipe.

This term of phrase comes about because as the dish bakes in the oven, the biscuit chunks cook through rising through the sauce and other ingredients. Literally bubbling up to the top of the casserole.

It makes for bubbly biscuit perfection in every single serving. It may not be a traditional crust, but this bubble up pizza isn’t missing any of the flavors you crave in a traditional pie.

They’re just serve up in convenient casserole form instead.

Ingredients

  • 1 lb Italian sausage
  • 1 15 oz jar pizza sauce
  • 1 tube Pillsbury Grands biscuits
  • 2 cups shredded mozzarella cheese
  • pepperoni slices
  • Italian seasoning optional

Instructions

  • If you’re not using pre-cooked sausage, brown your sausage now. When fully cooked and crumbled, drain the sausage.

  • Cut each biscuit into eighths.

  • In a bowl, combine sausage, cut biscuits, and pizza sauce. Stir to combine.

  • Spread this mixture evenly into a lightly greased 9×13 baking dish.

  • Top the mixture with the shredded cheese and pepperoni.

  • If desired sprinkle the top with a bit of Italian seasoning.

  • Bake uncovered at 375 degrees for about 25-30 minutes, or until the biscuits are cooked through. Enjoy!
