Instructions for how to make Homemade Eggnog

In large mixing bowl, whisk egg yolks and SPLENDA® No Calorie Sweetener, Granulated together until creamy and well incorporated.

Combine heavy cream, milk, nutmeg and salt In a saucepan over medium heat.

You want to stir often (so it doesn't burn to bottom of pan) until mixture reaches a slight simmer. Do not let it boil!

Adding only a ¼ cup of the hot milk at a time to the egg mixture, whisk, whisk, whisk. You don't want to scramble to eggs.

Repeat until all hot milks are mixed with eggs.

Pour the entire thing back into the saucepan. Whisking constantly. Mixture needs to reach *160 degrees so keep on low/med heat.

Remove from heat. Stir in the vanilla.

Pour the eggnog into a container and cover with plastic wrap. This will stop a film from forming on the top while chilling. Refrigerate 2-3 hours.

FAQs

What is the best alcohol to eggnog ratio? ›

Here's your golden ratio for pop-up holiday cheer: Combine 1 part of your selected spirit to 5 parts prepared eggnog. Want us to make it even easier on you? If you buy a 1-quart container of eggnog, you should use 6.5 ounces of liquor, total.

How long does homemade eggnog last? ›

Cover and refrigerate.

The more liquor you add, the longer it will keep — non-alcoholic eggnog should be consumed within 1 day; eggnog with 1/2 to 1 cup of liquor will keep for several days; and eggnog with 1 1/2 cups of liquor will keep for several weeks and continue aging and thickening quite nicely.

Why is my homemade eggnog so thick? ›

It will thicken as it cools. If you want a thinner, completely smooth consistency, you can add the entire mixture to a blender with 1 or 2 tablespoons of milk and blend until smooth. Serve with a sprinkle of cinnamon or nutmeg, and fresh whipped cream, if desired. Store homemade eggnog in the fridge for up to one week.

Does alcohol cook eggs in eggnog? ›

No. According to the University of Minnesota Extension, "eggs must be cooked to 160 degrees F to kill Salmonella that may be present. Adding alcohol inhibits bacterial growth, but it cannot be relied upon to kill it completely." However, if you use pasteurized eggs, no further cooking is necessary.

How do you dilute alcohol in eggnog? ›

Because the eggnog thickens the longer you keep it stored in your refrigerator (and it's quite boozy), you can always dilute it by adding more milk just before serving.

What's the best rum for eggnog? ›

Chairman's Reserve Spiced Rum

"When choosing a rum, I personally find a spiced rum to be the best for the flavors incorporated in eggnogs," he said. "Chairman's Reserve Spiced Rum is best for its quality and flavor profile.”

Does eggnog get better with age? ›

The unanimous verdict: Alongside a fresh batch, which tasted comparatively boozy and harsh, our aged nog went down more smoothly.

Can you freeze eggnog to make it last longer? ›

Alternatively, give eggnog a good shake and pour it into ice cube trays by the tablespoon. Once the eggnog is frozen, pop the cubes into a zip-top plastic freezer bag. Eggnog will keep indefinitely if properly frozen but will taste best if used within six months.

What alcohol is traditionally used in eggnog? ›

Brandy: Makes the Most Traditional Eggnog

For the most traditional holiday experience, reach for brandy (specifically, Cognac) to spike your 'nog. It's important to note, though, that both brandy and eggnog are quite sweet.

What makes eggnog unhealthy? ›

Traditionally made with eggs, cream, milk, and sugar, no one would say that eggnog is a healthy drink. Even a small serving can pack significant amounts of calories, fat, saturated fat, and added sugars. And then there's the fact that homemade eggnog made with raw eggs can be a food-poisoning risk.

What can I add to eggnog to make it taste better? ›

Spices and seasonings: You'll need cinnamon, cloves, vanilla extract, and nutmeg. Egg yolks: Egg yolks thicken the mixture, creating a decadent texture. Sugar: Of course, you'll need white sugar for this dessert-like beverage. Rum: Spike your eggnog with light rum or leave it as-is for a non-alcoholic treat.

What makes eggnog taste so good? ›

It's sweet, rich, and very creamy. Think of a glass of custard or melted vanilla ice cream! But it also has a slightly spiced flavor thanks to the cinnamon and nutmeg.

Can you eat raw eggs in eggnog? ›

If a recipe calls for folding raw, beaten egg whites into the eggnog, use pasteurized eggs. It has not been proven that raw egg whites are free of Salmonella bacteria. If you purchase eggnog from your local grocery store, the eggnog has been prepared with pasteurized eggs. You do not need to cook it.

Why are there chunks in my eggnog? ›

The cream, which is just milk fat, will appear as solid chunks in your eggnog. If you determine your eggnog hasn't gone bad, you can take the extra step of thoroughly mixing the cream back into the rest of the eggnog before serving and enjoying it.

Does eggnog taste better with alcohol? ›

Eggnog is the holiday sludge that some people can't live without and others can't stand. It's a mixture of milk, cream, sugar, egg yolks, and whipped egg whites. For those of legal drinking age, the beverage tastes even better with a splash of alcohol.

What is the alcohol strength of eggnog? ›

I went back and found their recipe makes roughly 17.5 cups, of which there are 6 cups of 20% booze, making it 1.2 cups of alcohol inside their eggnog, which means their eggnog is 6.8%.

What alcohol gets you drunk the fastest? ›

Highly concentrated beverages, like vodka and gin, are absorbed faster by your body. It also absorbs fizzy and bubbly drinks, like champagne or soda mixes, quicker than other drinks. How fast you drink: Chugging rather than sipping will increase your BAC faster and cause you to feel drunker.

Is alcoholic eggnog shelf stable? ›

Once opened, eggnog liqueur typically lasts for around 6 months to a year if stored properly. It's essential to keep it tightly sealed and refrigerated to maintain its quality and taste.
